Resumen
El presente proyecto de investigación se basa en la elaboración de bolos gourmet a partir de productos lácteos, frutas y chocolate. Los bolos son helados o postres congelados elaborados con los ingredientes antes mencionados y que se sirven dentro de bolsas plásticas. El consumo masivo de bolos ha generado un impacto económico positivo en el sector lácteo, al mismo tiempo que beneficia a los productores locales de frutas, proporcionándoles una fuente adicional de ingresos y fomentando la producción sostenible de materias primas. Estos bolos gourmet están diseñados para atraer a un público amplio que incluye niños, jóvenes y adultos, gracias a su precio accesible.
Además de su sabor delicioso, el producto está formulado para ofrecer un valor nutricional significativo al ser una rica fuente de proteínas, vitaminas y minerales que son esenciales para una dieta equilibrada. La investigación se llevó a cabo en la Unidad Educativa Agronómico Salesiano, utilizando una metodología de diseño experimental y práctico para garantizar la calidad y efectividad del proceso de elaboración de estos bolos gourmet.
La presentación atractiva de los bolos gourmet, junto con su exquisito sabor, ha permitido que lleguen a diversos lugares como eventos sociales, fiestas infantiles, ferias gastronómicas y reuniones familiares. Los consumidores han expresado su satisfacción al disfrutar de estos bolos gourmet, resaltando no solo su sabor delicioso, sino también su textura suave y cremosa que los hace irresistibles.

Abstract
This research project focuses on the production of gourmet bolos (frozen treats) made from dairy products, fruit, and chocolate. Bolos are frozen desserts or ice pops made with the aforementioned ingredients and served in plastic sleeves. The mass consumption of these treats has generated a positive economic impact on the dairy sector while benefiting local fruit producers by providing an additional source of income and fostering sustainable raw material production. These gourmet frozen treats are designed to appeal to a wide audience, including children, youth, and adults, thanks to their affordable price.
In addition to their delicious flavor, the product is formulated to offer significant nutritional value, being a rich source of proteins, vitamins, and minerals essential for a balanced diet. The research was conducted at the Unidad Educativa Agronómico Salesiano, utilizing an experimental and practical design methodology to ensure the quality and effectiveness of the production process.
The attractive presentation of these gourmet treats, along with their exquisite taste, has allowed them to reach various venues such as social events, children’s parties, gastronomic fairs, and family gatherings. Consumers have expressed satisfaction, highlighting not only the delicious flavor but also the smooth and creamy texture that makes them irresistible.
