Producción y comercialización de mermeladas caseras
Production and marketing of homemade marmalades

Resumen
La mermelada llegó a América cerca del siglo XVll. En Estados Unidos se descubrió que la pectina que se extrae de las manzanas sirve para espesar la mermelada. Las jaleas y las gelatinas elaboradas con pectina son muy populares y más consumidas por los niños; por otra parte, las conservas frutales son más demandadas por el público adulto. Se considera un método de conservación de alimentos y en caso de querer una consistencia gelatinosa se emplean acidificantes o pectina. Hoy en día siguen siendo un producto usado para endulzar y aromatizar nuestros alimentos como una simple entunada de pan así dando un mejor sabor. Nuestro objetivo fue elaborar y comercializar mermeladas caseras de uvilla, albaricoque, mora, fresa y durazno, para promover el consumo de la misma en el cantón Paute. Actualmente la gente descuida su dieta alimenticia, esto puede traer problemas a las personas y sufrir graves complicaciones de salud. Considerando, el punto de vista nutritivo y que las mermeladas son elaboradas en cientos de variedades de sabores, nace la idea de la producción de mermeladas caseras (natural), incentivando así a las personas del cantón Paute a consumir productos llenos de energía con un plus al momento de comercializar.

Abstract
Marmalade arrived in America around the 17th century. In the United States it was discovered that the pectin extracted from apples is used to thicken marmalade. Jellies and jellies made with pectin are very popular and more consumed by children; on the other hand, fruit preserves are more demanded by the adult public. It is considered a method of food preservation and in case a gelatinous consistency is desired, acidifying agents or pectin are used. Nowadays they are still a product used to sweeten and flavour our food as a simple bread spread, giving it a better taste. Our objective was to elaborate and commercialize homemade jams of grapefruit, apricot, blackberry, strawberry and peach, to promote the consumption of the same in Paute canton. Currently people neglect their diet, this can bring problems to people and suffer serious health complications. Considering the nutritional point of view and that jams are made in hundreds of varieties of flavors, the idea of the production of homemade jams (natural) was born, thus encouraging the people of Paute to consume products full of energy with a plus at the time of marketing.
